In this talk I will present an overview of a number of particle-stabilised technologies developed in Edinburgh. These include an easy-to-handle bijel system, bijel capsules and a self-assembling oscillating Pickering drop. On a more fundamental note, I will conclude by demonstrating that the cooperative motion of particles on solid-stabilised emulsions can lead to droplet coalescence.
