OCR forms a novel, transparent gel in high concentrations of ammonium sulphate. It has a high negative charge density and is shaped like a banana. Biologically these properties are important in its role as a DNA mimic. To investigate the structure of the protein gel we have employed a range of experimental methods including rheology and circular dichroism. They reveal a highly elastic gel with an underlying helical structure.
