Emulsions stabilized by colloidal particles rather than molecular surfactants are model arrested systems and promising precursors for energy materials. Here we investigate the bulk mechanical properties of water-in-oil emulsions stabilized by hard-sphere-like colloids via compression in a centrifuge, supporting our interpretation of the data with confocal microscopy. Our results reveal the dominant role of the liquid-liquid interface at the droplet surface in the rheology of these particle-stabilized emulsions. In addition to an elastic response, we find a plastic deformation, the origin of which remains unclear.
